In the type selector select the type of spot slope to place.
For slope representation enabled in an elevation or section view select arrow or triangle.

When in the roof by footprint sketch mode select all of your newly created boundaries and turn off the defines slope parameter.

This is how i d do it too since you re tagging roofs anyway and it could be argued having a schedule with roof type area totals to accompany the plan on a sheet would be more useful for those reading it since areas per tag are going to need to get summed by someone anyway.

Select the original soffit and edit the sketch.
To specify roof pitch select a slope defining boundary line click the numeric slope definition in the drawing area and enter a value for the slope.
Click the register link above to proceed.
On the properties palette select or clear defines roof slope.
In sketch mode select a roof boundary line that defines slope indicated by.
Try hitting the tab key while floating over the roof edge and you ll see that the slope tag can report the slope of the hip or the face.
